Terry McCoy is a renowned Irish Chef and Proprietor of the Redbank Guesthouse in Skerries, County Dublin. Since moving to Skerries more than 40 years ago, he was fascinated by the story of St. Patrick. Although St. Patrick is Ireland’s best known patron saint, much myth and mystery surrounds his life. For starters, St. Patrick was not even Irish!
